Originally, chimichurri is a kind of adobo or marinada for beef (the popular "asado"). Because I don't eat meat, I cut some tofu slices and marinated them.
Because I gave up eating meat long time ago, I didn't remember the recipe. So browsing the Internet, I found a couple of recipes. I didn't come up very good so the next time I will change it.
I used 1/2 red pepper, 1/2 Roma tomato, 3 garlic cloves, 1 green onion, parsley, paprika, crushed pepper, oregano, a very tiny piece of bay leaf, olive oil, vinegar, and water.
When I tasted it, I realized the tomato and bay leaf didn't match there but the chimichurri was already done. So next time I will make it my way.
I cut four slices of firm tofu and let them stay until the next day to get the flavor inside it.
As for the BBQ, I had red & green pepper, a large onion, and some zucchini slices in addition to the tofu.
And it was enough for my husband and me.
